Description
Xanthan gum is a polymer polysaccharide substance composed of 5 molecular sugars as a unit and polymerization from the same unit. Each unit consists of 2 molecules of glucose, 2 molecules of mannose, and 1 molecule of glucuronic acid. Its backbone is composed of 2 molecules of glucose formed by β-glucose through 1,4-glycosidic bonds, and its structure is the same as that of cellulose, and 2 molecules of mannose and 1 molecule of glucuronic acid are connected to the C3 of glucose to form a side chain. There are pyruvate and carboxylic acid side groups on the side chain. Because of its acidic group in the side chain, Chemicalbook is a polyanion in aqueous solution, which constitutes the tertiary three-dimensional structure of xanthan gum: the side chain with anion winds around the main chain to form a helical structure, and the molecules form a double-strand helix by hydrogen bonding, and the double-strand helix structure is maintained by weak non-covalent bonds to form a regular "super-bonded ribbon-like helical polymer". Its unique properties are related to the pyruvate it contains, and the level of pyruvate content in xanthan gum can usually be used to measure its performance.
