Sodium tripolyphosphate, also known as pentasodium phosphate, sodium metametaphosphate, STPP, pentasodium tripolyphosphate. White powdery crystal, good fluidity, relative molecular weight 367.86, melting point 622 °C, soluble in water, its aqueous solution is alkaline. It is often used in food as a moisture retention agent, quality improver, pH adjuster, and metal chelator. The aqueous solution of sodium tripolyphosphate is weakly alkaline (the pH value of 1% aqueous solution is about 9.7), and it forms a suspension (similar to emulsion) in water with a pH of 4.3~14, that is, dispersion. Sodium tripolyphosphate can also make liquid and solid particles better dissolved in liquid (such as water) media, making the solution completely transparent, as if it were a real solution, which is solubilization.
